Stretching between the Hudson Bay and the Gulf of Saint Lawrence, La belle province is Canada’s largest and the second most populous province. Fiercely independent, Quebec is the only Canadian province with a majority French-Canadian population. Settled by the French in the early 17th century as a fur trading colony, Quebec would be lost to Britain the following century. However, its French flavor remains. French food traditions abound in the rustic country breads, meat pies, cretons (a spread for toast made with pork), artisan cheeses (like Oka, made by Trappist monks), and foie gras. Soupe aux pois (yellow pea soup) with salt pork is a national French-Canadian dish. Feves au Lard (Quebec Baked beans) is often cooked with maple syrup. (Quebec produces more maple syrup than any other province.) Poutine, a popular comfort food, consists of French fries topped with fresh cheese curds and hot brown gravy. Pate chinois, another French-Canadian dish, is similar to English Shepherd’s pie. Pastrami-like smoked meat sandwiches and bagels baked in wood-fired ovens are local Montreal favorites.

Mocha Buttercream Chocolate Espresso Cake

Got such a beautiful cake out of this recipe. It came out very moist, and the glaze, I believe, helps when spreading the frosting on the cake, making it less crumbly. A nice change from basic chocolate cake. I made the frosting as directed, using exactly 240 grams of confectioners' sugar, and the consistency was perfectly spreadable without being too soft.

Sesame Chicken with Honey Sauce

These were really good, especially for a light dinner served with salad. We didn't have the dried minced onion so I used fresh -which may not have been the best idea since it the onion taste overpowered some elements- and used honey mustard salad dressing to dip because i was a little skeptical of that much mayo in there. Turned out good however, thanks for sharing.

City Chicken

I made this a few nights ago and it was a hit with my unexpected guests! Everyone said the gravy portion tasted similar to that of KFC's... but that the only thing that would have made it spot on is discovering which spices were missing. I didn't do the pork on skewers because I didn't have any... I just cooked the pork in a pan with the gravy. I added garlic pimento spice to the flour, salt and pepper coating because I never cook without some kind of garlic. I served it over egg noodles. I will definitely make this again, and play around with some spice combinations!
