About me:
I'm a stay-at-home wife and mother of two boys, ages 16 and 19. We also have two dogs who are very important to our family, a Basset Hound and a Lab. I grew up in a house of women who loved to cook. My maternal Grandmother lived with us... I'd say her specialty was baking, although everything she made tasted wonderful. My Mom is also an excellent cook, as are my three sisters. Grandma and Mom were always encouraging us to try new recipes, so I remember cooking at an early age. My paternal Grandfather, who was from Sweden, lived right next door and he had a huge garden every summer. I have many memories of fantastic meals made just from that garden!

Slow Cooker Stuffing

Reviewed on Nov. 27, 2008 by Diana S.
Wonderful idea that I'll use every year from now on! So nice to not have the stuffing to worry about. My only problem was that I didn't read the reviews (I was rushing around too much I guess :)) Anyway, IMO it doesn't need the high heat setting for the first 45 min. Mine ended up being very dark brown, basically burnt, along the outside, and that was after just 4 hours. The inside stuffing was perfect, thankfully. Next time I'll just keep the crockpot set at low the whole time. Also, I agree with the reviewer who said that if you're using the commercial stuffing cubes, like Peppridge Farm, you'll need more chicken stock. Fresh bread cubes need less liquid. I used Peppridge Farm and ended up adding about 3 c. of stock. Again, thanks so much for this keeper!

Liked the addition of noodles. Made this soup a heartier meal when served with fresh bread from the oven.... yummy!

Fast and Easy Tofu Lo-Mein

Reviewed on Nov. 17, 2008 by Diana S.
What a great recipe! Easy, fast and cheap! I added minced garlic and extra chopped onion and 1 green pepper that needed to be used... other than that I stuck to the recipe as written. The whole family loved this. I know I'll make it often. Thanks for a keeper!
