Very good; made with Santa Fe beans (chili powder, kidney and pinto beans). Bought the sweet potatoes in a can so it was easy to mix & I left the beans whole. Very good with corn tortillas, would highly recommend.

We had these last night and they were good, but I added a couple of things to "kick it up a notch". As written, I would give it a 3.5 because I think it's a little bland. I added three chopped jalapenos to the onion and garlic mixture which helped. I substituted black beans for the kidney; and the sour cream added at serving is a must! I baked mine for health reasons and the tortillas were a little tough (they were whole wheat too which could contribute)but I'm sure deep frying would make them crispier. I baked my potatoes the night before and peeled and mashed when ready to assemble; I also mashed the beans in a bowl before adding them to the skillet, both which helped make it less difficult. I will try them again; all in all a nice, healthy meat-free meal.

Not that great. The texture is not appealing. It is very mushy, with the mashed beans and mashed sweet potato.

Mmm, delicious! Of course I modified the recipe a bit for my own tastes and they were superb! I used canned black beans instead of kidney & I did put them in the food processor first. For those that said there was something missing...I threw in a chopped jalapeño pepper to the bean mixture and pureed it along with the beans. I too didn't use all the water called for and I also mixed the bean and potato mixture up together before making the burritos. I made these into 8 huge burritos and put them in a 11x13" casserole dish and covered them in enchilada sauce and a nice layer of cheese. I chopped up some fresh cilantro just before they were finished and sprinkled it on top. Even my picky kids gobbled them up and wanted more! I'll definitely make these again!

Awesome. Note one way to make mashed sweet potatoes is to heat the oven to 400 and bake them for 40-50 minutes. After letting them cool for a bit, they are much easier to skin and mash.

I discovered this recipe a year ago and my husband can't get enough of it. I have to make it once a month and they are great to freeze so he can heat them up anytime. Friends and family all ask for the recipe. So glad I found it. I leave out the onion and the dish still tastes great. I've used sweet potatoes and then yams, sweet potatoes are the best if you can find them.

These were great! I followed the recipe exactly but instead of making burritos, I made quesadillas. As another reviewer suggested, I mashed the beans and made the filling in a bowl then added it to the onions and garlic. Thanks for the terrific recipe!
