INGREDIENTS
8 bacon strips
1 1/2 cups frozen Southern-style hash brown potatoes
2 teaspoons dried minced onion
4 eggs
1/4 cup milk
1 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup shredded Cheddar cheese
6 (8 inch) (8 inch) flour tortillas

DIRECTIONS
In a large skillet, cook bacon until crisp;drain on paper towels. Brown potatoes and onion in drippings. In a bowl, beat eggs; add milk, Worcestershire sauce, salt and pepper. Pour over potatoes; cook and stir until eggs are set. Crumble bacon and stir into eggs. Sprinkle with cheese. Meanwhile, warm tortillas according to package directions. Spoon egg mixture down center of tortillas; fold in sides of tortilla. Serve with salsa.

I've been making a version of this recipe for years and can cut the cooking time in HALF. However, I did make the recipe as stated to compare with mine. The eggs were dry and flat and the hash browns a bit greasy. This is my version. I take a baking potato and pierce and cook it in the microwave. While this takes place, I cook the bacon (some times I use ground sausage instead). Remove potato, cut in half to let cool slightly. Remove bacon, wipe out pan with a paper towel. Cook eggs until light and fluffy. Crumble bacon and put in eggs. Heat tortilla. Place egg/bacon mixture in tortilla, sprinkle with cheese, scoop out some potato and roll-up. My kids don't like salsa with this burrito so they use a small amount of ranch dressing before rolling up.

i wrote a giant long (for me) review about how wonderful this recipes is--even leftover and nuked..but it didn't seem to show up---suffice to say you MUST try this! i use a raw potato instead of packaged hash browns and didn't peel it.

This recipe was just what I needed. I never have time for breakfast in the morning so I made a huge batch of these burritos and froze them. They reheated very well and were delicious.

These are yummy!! Since I like crispy tortills, I brown my finished tortilla (secured with toothpick) in a little oil in the skillet, then dip in sour cream...mmmmm

This is an awesome recipe!!! I used cubed cooked potatoes both times I've done this and they work great. I tried it this time with sausage in place of bacon, also fantastic!! Thanks for this great recipe:)

These were excellent and everyone gobbled them up. I did however double the bacon and eggs and omitted the worcestershire sauce. I sauted some onions and red bell pepper before adding the hashbrowns. I set the chesse on the side and let everyone add as much as they wanted along with hot sauce. This was a very hearty breakfast with a rich taste.
