6 slices bacon
6 cups frozen cubed hash brown potatoes
3/4 cup chopped green pepper
1/2 cup chopped onion
1 teaspoon salt
1/4 teaspoon pepper
6 eggs
1/2 cup shredded Cheddar cheese

DIRECTIONS
In a large skillet over medium heat, cook bacon until crisp. Remove bacon; crumble and set aside. Drain, reserving 2 tablespoons of drippings.
Add potatoes, green pepper, onion, salt and pepper to drippings; cook and stir for 2 minutes. Cover and cook, stirring occasionally, until potatoes are browned and tender, about 15 minutes.
Make six wells in the potato mixture; break one egg into each well. Cover and cook on low heat for 8-10 minutes or until the eggs are completely set. Sprinkle with cheese and bacon.

This dish is very good. However, we preferred serving the bacon along side this dish and topping with loads of sliced green onions and it was sooooo good!

I liked this but be careful. In the 8-10 minutes it took to cook the eggs they had hardened yolks. yuck. I'll probably try again since the only thing left on everyone's plates was the ball of hardened yolk. Also, we needed more salt.

My family has used this recipe for many years and it is one of our favorites. We leave out the green pepper since no one likes it much in our house, but leave everything else as specified in the recipe. It is a great "breakfast for dinner" recipe for busy weeknights.

This recipe is sooooo good. i really enjoyed how the cheese blended everything together as one big meal. I very much say that anyone who loves skillets should make and eat this masterpiece.
