"'I enjoy baking muffins--especially when they feature healthy ingredients like these do,' says Elaine Anderson of Aliquippa, Pennsylvania. The crunchy topping and juicy apple bits add just the right sweetness to these jumbo muffins."

The students in my Nutrition and Wellness classes made these muffins as part of their fruit/breakfast unit and had only great comments! We made them in regular size muffin tins and came out with 10-12 muffins per batch. Their only comment was that they would have liked more of the crunchy granola topping.

Yummy. Tasty yet healthy (or at least healthiER!) Did not peel apples since I prefer it that way. My husband normally does not like muffins but went for this one. I did have to add a touch of hot water to moisten up the batter enough (maybe 2 TBS but I did not measure), and yes you should double the cinnamon for sure. NEXT DAY: These taste gross after 24 hours, so definately eat them warm the same day.

Mmm! Yummy! I substituted applesauce for the oil and eggs and used all whole wheat flour and brown sugar. I used a medium-sized granny smith apple, and it came out great...I was especailly a fan of the sweet crunchy topping. Taking the other reviwers' advice, I added a bit more cinnamon to the topping and batter. Thank you Elaine, these were GREAT!!!

I wasn't a fan of this recipes, I think that it was a little to dense. I brought it to a brunch and other people commented that they really enjoyed it. To each their own.

These were pretty good. Not dry like I thought they'd be. They are healthy, but need just a little more "umph" or flavor. I thought they were missing something.

I loved this recipe! I was looking for a low-fat muffins receipe, and this one was perfect! I switched the flour quantities and added some bran: my family loved them! They were truly delicious!
