Hawaiian Fruit Crumble

Cream Cheese-Filled Coffeecake With Fruit Preserves and Crumble Topping

If you understand how to vary the recipe, you only need one basic coffeecake in your repertoire. My all-purpose version consists of four components: batter, cream cheese filling, fruit preserves and crumb topping. The last three can be changed (or in some cases, omitted) to create a custom cake.

Several steps build to the final salad crescendo. Chopped apples and bananas marinate in pineapple juice, and kiwi and strawberries are sliced. Then everything is mixed into peach pie filling and spooned into a beautiful serving bowl.

Fresh apples, pears and bananas are combined with fruit cocktail, mandarin oranges and chopped pecans in a dressing of cream cheese thinned with lemon juice and a bit of the syrup from the fruit cocktail.

Royal Hawaiian Pie

The bananas are first marinated in pineapple juice, and then they are arranged in a prepared pie crust. Before the top crust is put on, the bananas are liberally sprinkled with cinnamon sugar. Thirty minutes later, the pie emerges fragrant and golden. Top it with ice cream and chocolate syrup -if you dare.

Apples, peaches, pears and raspberries are the quartet of yummy fruit in this unusual-but-delicious pie. They 're mixed with sugar, flour and cinnamon and piled into an unbaked pie crust. A buttery sweet pecan crumble is then sprinkled on the top before this pie is slipped into a hot oven.
